The Gutless Wonder
The
"Gutless Wonder" is very likely the most sanitary, non-commercial food
preparation, fish cleaning facility in North America. Appropriately
named because a steady water flush washes away all residue while you
are cleaning your catch. When you finish filleting one fish, you drop
the waste remains into the "Insinkerator" dipsosal and start on the
next. When finished, a quick spray cleans the filet board making it
ready for the next user.
This facility was in the
making for 3 years, undergoing continued design modifications as
directed by our guests. The four station table is constructed of 3/4
inch Teflon coated milled aluminum. The filet board is space age
material with Zero Percent absorption as are the wrapping tables. The
following features are a part of why this facility is so unique:
- When the table is sprayed down after use, no residue remains. That means No Odor & No Flies.
- No surfaces will absorb blood or other by-product. There is no medium for bacteria to develop in.
- Each cleaning station is isolated. If your buddy slips with a filet knife, you won't be cut.
- For safety, the "Insikerator" can be turned off from any station.
- Each station has its own GFI plug for electric knives.
- The building interior, steel walls, ceiling, & concrete floor is designed for high pressure spray wash down.
- The
filet tray is transferable to the wrapping tables after a spray down at
the filet table. No separate sink to allow a residue buildup and breed
bacteria.

3 Simple Steps
1. Filet the Fish
skin, head, etc is discarded into the Insikerator (center). Constant water flow flushes excess residue into disposal.
2. Rinse Filet at side of Filet Station
3. Place Filet in Upper Filet Basket
a quick rinse from the hanging spray nozzle, remove the basket, and take filets to the wrapping tables.
